Gruyere 1655 – Aged about 15 months, this is our absolute favorite Gruyere. This raw cow milk cheese is sourced from a single dairy in Switzerland. Gruyere 1655 has a bright fruity flavor, with pronounced notes of fresh cream and a deep nuttiness.
Harbison – A soft and spreadable cheese wrapped in a strip of spruce bark. This pasteurized cow milk cheese is made by Jasper Hill Farm in Vermont. It’s rich and woodsy, with notes of bacon and mustard.
Manchego 1605 – This Manchego is made entirely of raw sheep milk produced from a single herd. The rind is unwaxed, allowing it to breathe and be influenced by its environment as it ages, naturally developing to its full potential. Selected for its sweetness and balance, Manchego 1605 showcases clean notes of hay and almond.
Colston Bassett Stilton from Neal’s Yard Dairy – The absolute best version of this classic English blue. This pasteurized cow milk cheese is rich, minerally, fruity, deep and savory. It’s strong and full flavored, without being sharp or overpowering.
All cheeses are cut in approximately half pound wedges. All orders are available for in-store pickup only. Your cheese will be ready to pick up TOMORROW after 3pm during our normal business hours.
